Hot scones loaded with jam and cream are going to be the new drawcard of our Village Cafes thanks to Minto Gardens resident Rosa Johnson. Rosa won the inaugural Anglicare Great Scone Bake-Off making a crusty scone that is deliciously moist inside, using yoghurt and an egg as her secret ingredients for added nourishment.

Colin and Rosa Johnson moved from Sussex Inlet to Minto Gardens, in a ‘reverse’ retirement journey as most retirees move down to the South Coast. Rosa has been a member of the Country Women’s Association for decades and continues to attend their weekly meetings now in Campbelltown and being involved with their activities. No doubt this is where Rosa had the chance to perfect her baking skills. She is a great example of seniors who are thriving in their retirement- engaging in community activities as well as tantalising their tastebuds!
